Lemon olive oil cake
Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup olive oil
- 1 cup sugar
- 3 eggs
- 2 tablespoons lemon zest
- 1/4 cup lemon juice
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Method
- Preheat oven to 350F and grease a 9-inch round pan.
- Whisk flour, baking powder, and salt in a bowl.
- In another bowl, beat sugar and eggs until light.
- Stir in olive oil, lemon zest, and lemon juice.
- Fold the dry ingredients into the wet mixture.
- Pour into the pan and bake for 35-40 minutes.
- Cool on a rack before slicing.
Tip: For extra zing, glaze with powdered sugar and lemon juice.
