Lemon olive oil cake

  1. Preheat oven to 350F and grease a 9-inch round pan.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. In another bowl, beat sugar and eggs until light.
  4. Stir in olive oil, lemon zest, and lemon juice.
  5. Fold the dry ingredients into the wet mixture.
  6. Pour into the pan and bake for 35-40 minutes.
  7. Cool on a rack before slicing.
Tip: For extra zing, glaze with powdered sugar and lemon juice.
